I wrote a cookbook

it's been um quite a few weeks since
we've been here last we've all gone
through Rosh Hashanah which was pretty
incredible I did a beautiful Simone
Hempstead air and a honey tasting at my
at my Rosh Hashanah table was really
cool I went to a I went Liz roofing from
crochet like me had a and an ape we went
to an apiary where they kind of the bees
grow and make honey and they have their
highs it was unbelievable um so everyone
go follow Liz and she does great food
things she talks she's the one that she
comes on the show a few times to you and
we talk about all the farmers market so
that's where my obsession with farmers
markets has come from so um yeah it's
been a really great
amazing couple of weeks and we'll talk
about that in the next in the next
little bit but I just want to talk about
the guests that I have on my show today
because I'm so excited to have back in
the studio this is your second time in
this studio but we did a challah bake in
my house and I company that's almost a
year ago I know I have Shannon sonna
cookbook author high-five to that we can
say isn't that like the best view in the
world that's very exciting
okay thank you to you for all your
support and guidance and I was sending
Naomi text messages and emails frantic
what about this what do you think what
should I do and you were always so
helpful thank you so much I think I got
one of the final calls to come in when
you're at my house yes words that I make
at my house and I had I had just got off
the phone with Gadhafi's la de Witts and
when we met up a time to come in and
meet so I usually you finalize your
cookbook and wrote it and it came out
awesome the same time period when I was
still writing my cookbook so yeah it
well my book was like 14 years in the
making because I've had the recipes for
14 years I just got my act together with
and then arts got partnered with me was
a dream come true but this is like
holding your book here holding your book
here in my hands is just amazing I feel
like I'm holding your baby your baby
Billy who is a little over a year now 20
months yeah you know she's way cuter
than you know but this is the most
beautiful cookbook I'm absolutely loving
it this took a little bit of about a
background of what you do and how you
came to be a cookbook author of dough of
dough of Jo I know I really do love
dough don't have no tell us I would say
you're so you're so punny I know so I
run a website called the nah sure which
I've been doing for almost eight years
which is crazy but long before I was
doing the not sure I started baking
Kahlo when I was a teenager
and I just loved baking kala and I've
always loved oh I love Joey things my
husband's would say he's one of the
doughy things that I that I love all
that so cute and about two years ago I
was
connected with a book agent who loved
what I did with Halle the book agent
wanted to sell my book and that one and
then the book was born and it was very
much a collaboration between myself and
the publisher which I really loved
oh that's interesting yeah yeah so I
sort of came in with the idea about
Halle and they said let's we love it
let's expand it and so we selected the
seven kinds of dough that we would focus
on so it's Halle babka bagels
hamantaschen rugelach PETA and matzo you
know I feel like that this is coming
like five years ago might not have been
so trendy but right now Bucky's trendy
the bucket craze really started around
five years ago when breads bakery known
as la même in israel ori chef kori chefs
and his partner gaudi opened breads
bakery in New York City and a food
writer named Gabriele aggression soon
was the first one to really write about
this new iteration of babka that was
unlike the bob could we all knew we
could buy as a bars where he died for
you know Shabbat lunches Oh makes yes
yes it was a different it was a
different creation and and that
inspiration sort of came from the
Israeli bakers in Israel going to Europe
training pastry training in Europe
coming back and bringing those European
techniques to Israel and sort of a new
style of baking was formed in Israel and
that style which is this hybrid between
Jew classic Jewish speaking and French
or European style pastry mashed up then
came to New York when breads opened okay
so that so but really now it's like that
I always said we're a microcosm of the
big wide world right so it always comes
down to the kosher world about two three
years later so even though like I'm in
was here five years yeah like people
weren't really aware of it so much in
the kosher world doesn't have in America
doesn't have kosher certification but I
think that that the ones in Israel do
for sure I feed in there but I've seen a
lot of kosher places I mean pomegranate
they're doing it so that everyone's
min-sik right everybody mimicking Lamia
right yes so now we have the awesome
pomegranate Bob
No okay pomegranate supermarket let's
not get confused cuz pommy been and
brisket goes well together just not in
vodka
so let's pomegranate supermarket makes a
pulled beef brisket right old belief
babka right a pulled brisket babka yes
okay we got it right and i think that
becomes so trendy now it wasn't Food &
Wine magazine a couple year within a
year ago had the front cover was all
different bunkers I have a better Homes
and Gardens magazine right here that has
uh spread on babka also I've seen
spreads of vodka and on many many major
magazines and that's one of the things I
write about in the vodka chapter is that
you now confined bloggers and
restaurants you know Jewish and
non-jewish who have really rallied
behind vodka and are cleaning just all
of these amazing iterations of it and
breads like holla
like especially now with challah bakes
and I think this is a perfect time to
talk about all this with it with with
all the halibuts going on and the timing
of the books so perfect like oh this
color bakes and people then once they
start with a halibut start then making
color where else you go to get a great
color recipe you can get some online but
there's nothing like having a hard copy
and I'm not just saying it because we
both are books like I love cookbooks we
love reading on Shabbat there is nothing
like I call it when you lick it it's how
my grandparents use through their
newspapers right they were like look
this their index finger and turn the
page with a moist finger right so let's
talk about when I when I talk about a
cookbook I always like imitate like
licking my finger and turning a page
there's nothing like holding a hard book
and just reading the story about its
recipe and how it came to be you know
how come matzah
how come matzah yeah um I think for two
reasons one my publisher asked me to do
it oh sure why not put the money in it
yeah but mots is really like it's a
cracker it's a flatbread and so I don't
necessarily expect people to make it for
Passover right cuz it's so got so many
yeah I mean on vacation right it's
unrealistic to make it kosher for
Passover but um it's really quite lovely
as much lower carb kind
cracker I love that and it was brilliant
essentially Jewish you know it really is
you have a job read every single talk I
can't believe that I'm so you're the one
that thought of doing this like no one
else did it earlier well you know what
there's I'm on there so if I had had
more time there's probably more dough's
I would have put in but for now it's
okay because you know I'm sure there's
gonna be a second book of thing but I
love that there's a hamantaschen chapter
and the rock Allah hello Rock Allah how
so in now also it's true yeah well
petite shale which is sadly just
recently closed down you go in there
there be 15 kinds of rock rock Allah I
love to I gained ten pounds one summer
when I spent a summer in cooking school
a traumas around the corner from there
and I like to even have um gravlax yes
there's a recipe for ground ax I did an
insta story for gummy claw making grab
it's so easy and I you know running a
website where we focus so much on video
I really wanted to take the concept of
how people consume food media these days
meaning they're watching videos they see
the pictures they it makes it so much
more accessible when you feel like you
can look at it and say oh that's
actually not as hard as I thought it was
and I wanted to take a piece of that and
put it into the book so that people
could feel like oh babka is actually not
so complicated bagels are actually not
so complicated like I can do this at
home and feel really good about it so I
really want I really focus and actually
my sister-in-law worked on it with me oh
really
yeah she's a graphic designer so these
spreads you know we planned out very
carefully and a lot of thought went into
how people would be able to recreate it
at home and each chapter each dough
chapter has a spread on shaping so that
some of that mystery would be taken out
right now because I think sometimes the
shaping and your your shaping of the
round popke is beautifully done your
[ __ ] did they take these pictures must
have taken a long time they didn't
because I brought in a wonderful
photography student who was just like
boom boom boom but you know you sit
there and each shot has to be styled I
am so even just a simple one of like
rolled up dough
yeah they sit on a board there
I know what goes on behind that so I'm
and you had the best team possible I had
the best team posted this eight shots of
how you roll and shape the regala from
you know and also with each kind of rug
Allah and I'm not rocking off babka
yeah so beautiful I'm like how long did
it take you to shoot the book you know
it's a little bit of a like a
back-and-forth process essentially we
had four or five photo shoots with this
photography student to focus on the
overheads overhead process yeah I'm done
the remaining shots I did at home so I
mean from start to finish I started
working in the book after the game so it
was from like October to February last
October last October it is fair baby
right so it's right because we're doing
our photography around the same time
time yeah uh-huh yeah I love the fact
that your flavored colors hello so in
now right what can I hear from everyone
what they like in hell is shoot me an

you got raising the color on Rosh
Hashanah and that was it right look how
far we've come
yeah I you cerebra the sourdough yeah

you know I started making flavored
dough's about 12 years ago I would say
when I was still living in Washington DC
and the first one I did was this one
rosemary garlic which is in the book and
it's a little homage to my background
because I'm Italian and Ashkenazi and
sort of cool I'm obviously very cool and
and then I did everything bagel and then
I started playing with flavors like
kalamata olive or sun-dried tomato but
the rosemary garlic was everything bagel
were really two of my favorites and so
those are in the book as well as my
onion collar rolls which i pair with a
sloppy joe filling which for Shabbat
dinner is so fun and every time I make
it it's not fancy my mouth is watering
but had me at sloppy joe and onion
challah Hey
it's very fun where you do pulled
brisket sandwiches on onion collar rules
and one of my other favorite recipes
from in there you know pretzel collar
has been very popular oh my god yeah I I
make I actually by Johnny Johnny's
pretzel challah had been in the studio I
don't know if you guys have heard of
Yanni's pretzel holla but he made
the best I've heard there's a bakery in
LA that I have know has been doing it
for a long time you know the name of it
oh I don't but I can find out for you
okay I know I know they've been selling
it for you know yours probably more than
five six years but this is one of my
favorite recipes from the book so big
mega college ogz forever but I wanted to
do something a little special and so
these are pretzel challah dogs and
bretzel hot dog I love it that's so cool
that's right up my alley and so
sometimes they make them for Shabbat but
I often make them like for parties I
made them for a Hanukkah party and it's
just something a brand of hot dogs that
you use I do I'm very partial to a Belen
high okay I did not I did not know he
was our sponsor a burst your sponsor of

you know whenever when when when he was

it for two years I have tremendous

in my book as well but um whenever I go
somewhere I see hot dogs being sucked
like at the Yankee Stadium or you know
all the other places they have em
Madison Square Garden they have the
kosher booth and I order a hot dog
because I love hot dogs yeah and what
brand of hot dog see you use and they
always say Abelson home oh that's so
great yeah I always say can you say that
on camera I said that's great
okay I love that is that complicated to
make pretzel challah I I think it's it's
pretty easy never done it I've made
pretzels so I mean it's it's as simple
as making a pretzel really I mean you're
doing the same process it's just make
your holiday you let it rise as usual
you can use your holiday which is great
I just my regular holidays your regular
holiday oh I will say this like if
you're gonna do a full-sized challah you
are gonna want a really big pot you got
the junk the whole thing dunk it in what
you have to dunk it in a pot of
simmering water with baking soda and a
pinch of salt so that's what separates
it out from being regular challah
yes Superette so challah exactly and you
explain all that in there yes
okay that's good because I'm totally
gonna do that and then glaze it and then
glaze it with egg wash
oh look normal like normal and then I
really love I love six like ec salt hmm
all of my flowers but especially of
course on this one I couldn't let you
see salt just bite-size probably good
yeah uh-huh so that's really interesting
you know it's Erev Yom Kippur today and
we are totally you know when you're
listening to this a tear of Yom Kippur
wait we met earlier on like we're guys
wait a minute is it Thursday yet no the
week I rash the week No jinx Akeem I
cannot always come in or quite often
we'll meet earlier on in the week
depending on the guest we are we are
airing this show air of Yom Kippur today
is Wednesday two days before and I hope
I hope I already have the chicken done
for my husband to eat before fast then I
know like I got to see what's going on
in my house I haven't even thought about
my menu but we'll talk about that in a
sec you know it being Erev Yom Kippur
and we got to think of a little bit
about next week as well this is such a
great fun idea first o'clock oh right
right like something for the kid and
what you probably could even do is you
make your regular challah takes them off
and make these as appetizers I do that
all the time I just make a really big
batch of Carla I portioned some off for
mahalos and then I'll push and some off
for the holidays and then I have an
appetizer in my regular kalus and now
you know my fellow a daughter who's five
another daughters more and a half so
first to cook meals we have like 5,000
kids coming over
I know it's and is there so pink no it's
fun but they're they can be picky right
but who doesn't I mean kids love this so
yeah I just was in Memphis I did a
cooking demonstration oh I love me I've
never been I'm dying oh my god shout out

Rebbetzin is amazing like I I cannot
abide rabbits and rabbits and client
invited me to count riff decline invited
me to come like twice you know her
oh I love her to pieces and the rabbi is
unreal and we had a hundred and thirty
women come which is pretty good for a
condom right but I went I like to check
out all the Jewish kosher haunts over
there in Memphis so there's holy cow but
we'll talk about that that I keep some
we're going to talk about that later
because I don't want to lose the moment
now I'm gonna do a restaurant
I want to hear about your travels too so
it's right okay good so so there's a
place called Ricky's cookies and she's
famous I've heard of you've heard about
it she's a tiny skinny yeah older lady I
don't say older she's like a young young
bubbie like rights just bit older than
me but she's amazing and fabulous and
she does he's insane cookies but what
she does more insane as though Hollis so
you got to go to Memphis and you know of
course you got a Graceland which I did
after Graceland you got to get Ricky's
cookies amazing and then you go to holy
cow
so that's a little bit of our Memphis
will give Memphis a shout out right now
then so really great Jewish community
but they have you know only one main
restaurant maybe it's all they need cuz
it's that good awesome

doing and they're doing all kinds of

the brisket fries I pulled it up on my

gets turned in that's like in your ninth
month because you don't know what's you
know till it goes to print and there and
then I had another phase of that which
was before the book was released in
August was probably much even more
anxious of a time than when in the
process of writing I was very anxious
before it was I don't think had too much
anxiety because it was done to like was
something so fast it was just I still
don't think it's hit me I love your
cookbook thank you it's fun you know
some sell now on Amazon I call it the
hump get your comments copy now oh and
also like what a great gift to wring
somebody's house if you're going for
something right so cut well you know you
got it first they buy this one because
you know this is the season of this book

a Kingston Avenue food crawl excuse me
everybody knows Crown Heights has the
best P oh yeah not even a question and
I'm about to demonstrate that oh yeah
all right so it's a kosher food crawl up
and down Kingston Avenue make a you know
loop around all the restaurants that are
gonna be there 25 vendors we have
restaurants bakeries caterers local
caterers and beverages I bought actually
Lutheran wine oh we've had this I got in
this studio before oh yeah baby okay
this is a royal wine shout out to you oh
sure calm and Roy wines
oh he's gonna really open it okay great
it's never too early to drink right
check you know what can I just say when
this goes to air my mum's waking up and
going ashore
the next day yeah like it's good to be
16 hours ahead sometimes I always think

Heights a lot of these people do
catering as well so you know if you can
listen out so we're going on a food
crawl and this is actually for its
attacker fundraiser yes it's a
fundraiser for Toys for hospitalized
children which is a division of ncfd the
National Committee for the furtherance
of Jewish education the ncfd
is the first nonprofit established by
Habad in america that's a very
established old organization that
there's a lot of good work for the
community for the tri-state area and you
know nationally as well excuse me it's
like it's Sunday October 22nd
it's it's Sunday October time 2nd it's
about a week after some quest arrow and
tickets are $54 right the proceeds from
the tickets go to this organization
so right now you should just take a
pause or right after the show finishes
airing and you know they say there's no
better way giving sadaqa to shiver to
feel stuck on my roommate roller hugs
there are and it is Yom Kippur tonight
and you want to do that you know roller

this is so good it's a it's a mix of
Cabernet and Shiraz okay it's ready wine
yes excellent wine and you know my
friend Mindy at the Ivar's wine and
liquor he came in there and I said you
know we said this bottle will do it this
is an excellent bottle at a great price
point peppers wine on the current Crown
Heights they smell so good
yeah am i cold yeah they do a great job
you know they've been in the community
for like 45 years do a great job
servicing the community they really know
their wines okay you like it and it's
good I like it is ek kay is taking away

there's I went to two of the
participating vendors and I brought
samples from them to share with you
today the first is JJ's holy cow the
food truck
which is also a close friend of mine do
askin he's hooked up yes he's up he's
actually an old classmate and I was
really excited when you opened up his
food truck and he shared with us several
sandwiches today this is the classic
burger oh wait
does that mean we have to wash I mean I
don't mind washing tight don't think I'm
saying I like often washes the bad thing
I'm just saying okay this is the
Portobello burger this is actually a
vegan burger Shannon it's a pretzel bun
yes all the buns are our friends are
vegan as well this one is a vegan burger
and yeah he does a really good job Ryan
doesn't eat fresh every morning yes
fresh every single morning look at this
this is like the epitome okay and its
finest form and peppers and onions yeah
so many different groups who live there
so that's amazing okay you know that I'm
totally gonna be eating this at the end
of the show this is the avocado burger
this is the sunrise burger with bacon
bacon and it gives a beautiful crunch oh
yeah
so beyond generous if everyone go
frequent the store before you yes it's a
food truck if you haven't tried JD's
holy cow it's a must it's an absolute
must know they're actually stationed he
just can we get in the front of the

and he makes all whose food fresh every
morning please I watched him make these

do it with a group of people is fun and
it's a little bit more about the idea
behind it okay so the idea behind it you
know the the fellow who runs the
organization toys for hospitalized
children is also a friend of mine and he
you know he's his grandfather rabbi JJ
Hecht
Oh started the organization n CF GE and
started this organization toys fossilize
children I believe it began in 1953 and
since then they've distributed millions
of toys to children to six children and
that are in the hospital that can use a
gesture yes it's nondenominational you
know the toys go to you then go in and
any child who needs that gesture of
support gets is it's provided to from
toys for a special dream it's incredible
organization I'm very proud to be
working with them on this project I love
it yeah and again the tickets are $54
it's you know great price you're the
food is all donated that's all the stuff
all the money goes to stuck up and the
there's oh very important there's
limited sit oh yes thank you yes yes
there's limited two things there's a
limited amount of tickets being sold so

separate award what we're gonna call the
experts Choice Award that will go to in
the in the experts opinion the best
taste of Crown Heights so there's a lot
of opportunity here for the participants
a lot of opportunity for the restaurants
involved and we're really excited about

business started back in Beirut Lebanon
my grandpa started the business it was
more of a chocolate shopping me

when they immigrated to America they
started shops you know what selling some
bagels and things on Kings Highway and
then they just transformed and made you
some cakes and pastries and we are today
well the Chantilly is huge no not so big

your dad and the alcohol that's my

Melbourne rather Haim Sarah Bronski was
a food importer in Melbourne and my dad
ran his Sydney operation and
they imported candies from all over the

I made 96 stuffed cabbages yesterday all

if not you can boil them you can put
them in the freezer then defrost and the
leaves will separate there's a recipe
actually in perfect for Pesach about
making stuffed cabbage I never put rice
in mine any case so just to me
I don't like rice I don't need to feel
happy just I've chopped meat and it's
more carbs it's now carb free so you can
do stuffed cabbages that's so popular
now and then a bunch of overnight roasts
you know what I was trying to get in
before and I kept pushing it off now I
guess we'll do it at the end about
preparation for Sakura and try to you
know you can make a roast the night
before like Friday afternoon put it in
the oven cover it tightly even your
regular menu your regular roasts you put
them in the oven covered at 200 degrees
before lift benching and leave it in
there till show birthday it is so
different I did it yesterday for a
Instagram takeover um I was doing
foreclosure calm I put a roast in for 16
hours 200 degrees I woke up to the smell
of roast there is nothing better than
that right it smells amazing so try to
think ahead a yup stickers a great great
idea for Scott in terms of Yom Kippur
breaking your fast my family just mix
the cheese blintz is the cheese blintz
roof lay a pastry there is nothing like
a glass of milk and a pastry after a
fast if you want to have insist on
having flakes afterwards go for it
you can definitely break your ass on a
glass of milk and a delicious pastry

and plan ahead what
quite often do is I even on a regular
weekday whenever I make one roast I
never make one I make two one for now
one for the freezer label it and data
what you put in the freezer and that way
you've got you know first day second
days covered you can eat something on
Wednesday night and then serve it
against Shabbat lunch for seem hotter ah
you know that's ten days apart you know
you're not eating something twice you're
not eating leftovers you're saving
yourself so much time so I really think
that's something definitely worth
thinking about and planning ahead write
your list you know go to the supermarket
and wait for inspiration to hit you
you'll spend too much money go with an
organized list be thoughtful about your
food and your money in your diets drink
a lot of water go for lots of walks
