There are actually two types of kosher cheese
operations, I would call it. Number one,
cheese factories are located in very remote
areas, usually. They'll just have a team
of mashgichim going there for a short kosher
cheese campaign. They'll go out to somewhere
in the Midwest or maybe other parts of
the world, kasher the plant if necessary,
and they'll be supervising the whole time, the
cheese production, for a few days, and that'll
be it. And they do this maybe once a month,
once every few months. Other cheese factories
have a team of mashgichim living there or located
near the factory. Very often there's a mashgiach
house or mashgiach apartment. I deal with that
myself in these certain areas but the company
needs to have kosher cheese 24/7, and therefore
a company's entirely a kosher cheese factory.

somebody living there the entire year?
A team of people, actually. There's a
rotation, they're there even during Yom Tov.
They have a sukkah there, they bring the
shofar there for davening, everything.
