we all love latkes on Hanukkah but
sometimes they tend to be a little heavy
and oily we're gonna fix that we're
gonna make shredded potato with Pat
tissue you may ask Gabe what is Pat
tissue
it's the wet sticky dough when baked
gives you eclairs or cream puffs or when
fried gives you two rows or beignets by
combining patty choux and shredded
potato and deep-frying it we're going to
create a light and airy crispy fritter
latke in a pot place 3/4 of a cup of
water 1/2 stick of margarine quarter
teaspoon of salt 1/2 teaspoon of sugar
and heat until the margarine is melted
stir in 3/4 of a cup of AP flour
continue stirring with the flame on
until the batter pulls from the side of
the pot and leaves a trail transfer to
another high-sided pot or a bowl and add
four eggs one at a time making sure each
egg is fully incorporated before adding

once done set aside on a paper towel
lined plate and fry the next batch serve
with sour cream or applesauce with
latkes as light and airy as these you
won't feel guilty eating more than 1
