So many recipes online are meat or chicken
based, but call for ingredients like milk,
heavy cream, or cheese. So we asked the OU team
for their tips on the best swaps for kosher
cooking. I make a breading for chicken, a panko
breading with lemon rind and also a parve shaved
Parmesan. It's so good. I know there are a lot
of really good parve oat creamers that work well
in recipes. I use coconut cream a lot in soups
and chicken curry dishes to substitute for cream
or sour cream. Instead of butter, I like to use
coconut oil. When a recipe calls for buttermilk,
what I like to do is use one cup of soy milk and
then one tablespoon of vinegar, mix it together,
and you've got non-dairy buttermilk.
I Made a beef arayes recipe this week,
It had a dip that called for yogurt. I
tried a parve coconut yogurt for this dip,
and it came out absolutely delicious. I
put a little bit of lemon in it just to
take out that coconut taste. My mom's secret
for her lemon cake is non-dairy sour cream.
Nutritional yeast has almost like a Parmesan
flavor. Just make sure when you sprinkle it on,
it still has to cook with it to get that cheesy
taste. But whatever you do, don't put too much or
