Hi. Okay, today there's a very big
sourdough craze. Everyone's into health
and eating good and eating well and
eating good food. So, we came to one of
the biggest sourdough companies that we
have. All right, Matiam. Hi, how are
you? Okay, so where did you start this?
Where did you take inspiration for this
and where does this come from? Yeah, we
started my wife started at home the time
of co everyone was very bored. My wife
took a Zoom course and she learned how
to do sourdough and we started selling
one piece, two pieces, three pieces.
Then it went up and up and up. We were
selling from our house for about a year
or a little bit more. So that's how we
started out there. So your kitchen
probably was a wreck in the beginning
every day. I know I've had businesses at
home. It's it's a lot. And then and then
so she is the one that created the
recipes. She's on top of she's the one
that started everything. She perfected
the recipe. It should be something um
out of the world. Okay. And where does
it go from your from your house? From
your kitchen. So after a year, we had to
go out. We rent out we rented a location
and we started that was this one. Not
this one. Other location. Okay. And we
started baking commercial and from there
we started selling the groceries, the
party planners, caterers, etc., etc.
Wow. Okay. And now you have this. So
this this store is open, I understand,
all week, right? Correct. And what you
sell all week? All week we have fresh
bread and mainly we have Thursday and
Friday full like a Shabas market. We
have sour, regular salads, crackers,
cakes and a lot of dips, right? So
you're your biggest thing is Shabas but
you have all week you have sandwiches
and food and everything. Okay. Um who
you came by the way Sever who came up
with the recipes also your wife all the
the dips everything or the same? the
dips a few. My wife did and a few I have
a chef now. Okay, that is amazing. So,
tell me what is it that you sell every
like I I see there's this this smells so
good. It's so good to stand over here
and it it looks crunchy. I don't want to
I don't want to touch someone else's
halo, but it looks very good. So, what
is it? How many flavors do you have? So,
we have first the regular the classic
and we have plain, we have with sesame
seed with everything spice and then we
have the plain. We also have braided the
shabas. A lot of people are mak have
braided high yeah traditional look style
traditional look. Then we have a
different one a oval shape. Some people
are maket they have only tissue. They
have a round one. So this is more oval
shape. Okay. This is the classic. We
have this in a few kind a few sizes. We
have baguettes longer baguettes. Many
baguettes. We have rolls. We have
superloaves. Then we have with
vegetables. We have a lot of kinds of
vegetables. We have jalapeno, olive and
garlic. We have tomato. You're making me
hungry. I'm not going to. Yeah.
Mushroom, onions, and then we also have
a more healthy uh version. We have
multigrain and we have spelt and whole
wheat. What What is your bestselling
color? The classic is the the classic.
Some people like that everything sesame,
but the classic just an interesting
question. I've seen online people make
designs and you could technically do
that like make art on. I know you when
my wife started, we did that a lot, but
it's too time consuming. We have to send
out a lot and uh just uh a lot of time.
I I have seen
um a a sourdough board. Is that
something you make or you going to make
maybe one day? So we have not a board.
We have a gift box. Very beautiful gift
box. A gift box that has a sleeve on
top. It's very nice box and a lot of
people are ordering an alpha pur or to
send the gift to Andy Shabas. Yeah. So
we have three options. Okay. And the one
is with one color, three dips. with two
kalas and four dips. And then we have
the super loaves, two of them with five
dips. You can add a wine. It comes with
a nice gift card and a nice nice le
card. Okay, Monty. So, what is the life
of a kala? How does it start? So, the
first thing is we make a starter. Okay.
Flour and water and we mix it. After a
few hours, it rises and starts to
bubble. That's when it's ready. We make
a dough. Flour and water and the starter
and some salt. Mix it all
together and then we take it out of the
mixer, put it into separate containers.
As you see over here, we divide the
dough. Every dough is uh five, six
containers. And every half an hour we
make stretch and fold for the
dough for a few times. And then we let
it in this room to rise for a couple of
hours. And it's ready. We take it in the
other room. We weigh every piece. We cut
every piece. We weigh it. We shape it,
make it in a like a circle, put it into
the banet on a container, and then we
let it rise again, and then we put it
overnight in the fridge. So, it's a lot
of hours from beginning to the end,
about 28 hours, and we take it out of
the container, and uh we score it and
make a design on it. And then it goes
into a pot. We cover the pot into the
oven and it bakes for half an hour
about. Then it's crispy. Okay. And the
ones that have flavor, when does that
get put in? Before it rises. After the
ones that have the vegetables.
Vegetables. Yes. Correct. When when we
do stretch and fold, that's when we put
it in. Jalapeno, olive, and garlic. So
now we saw how the kalus gets made. What
else? What other sour products do you
have? So we have a very good item, a
sour crackers. We have a spelt and
regular
Very good cracker. It's only olive oil
and starter and water. That's it. So
that's pretty healthy. Salt. Yeah. A
healthy cracker. Delicious. Crispy. We
have it in spelt and and regular. And we
have a lot of flavors. We have um zatar
flavor. Everything spiced, sesame seeds.
And we have chia seeds and flax seeds
and garlic. That's one one item we have.
And we have another flavor another item
where salo ficasha. We have also a few a
few flavors. I've heard of this. This is
a very popular product. Yeah. So this is
we have with jalapeno, we have with
spicy muka, we have with garlic, the
olive is sold out, I
guess. We also have and we have another
sour product muffin. SA muffins. We have
three flavors. We have chocolate chip,
apple, pecan, and blueberry. Sa muffins.
Delicious. We make it fresh every day.
You have a lot of different dips. Are
there any more dips that you're still
coming up with and making different?
Every few weeks we try to get a car dip.
What's your most popular dip? The basil
chumaturi and the mushroom is very
popular for people that love mushroom.
Then we have dairy
pastries. The wafer cake is phenomenal.
Canoli's hish gluten-free with a very
good gluten-free roll packed nicely
individual. And we have gluten-free baka
which is probably the hottest item over
here. I read velvet cookies, chocolate
chip cookies, and sprinkle cookies for
life. Wow. Okay. I've heard about a sour
knife. Is that something that you sell?
You have that? This is a sour knife.
It's a unique knife that we sell. Let me
show you how it works.
So, I guess this controls how how much
the slice. Correct. Correct.
Wow. Nice slices. Wow. Looks good. This
is nice and crunchy. Wow, delicious.
What is something that unique that you
have in the store? Is there anything
different? Yes, we have every week a
pasta cookie that usually we make it by
handity.
