Gentiles are forbidden from observing the Sabbath like a Jew. A Jew that desecrates Shabbat by violating one of the 39 melachot, is considered an idol worshipper and their Judaism is on suspension - Rambam - Hilchot Shabbat 30. A machalel Shabbat can't be counted in a minyan, used as a witness in any Jewish ceremony, including weddings, and you can't even say AMEN to their Kaddish. Another covenant between HaShem and the Jewish people is the Brit Milah, the mitzvah of circumcision. Next is the covenant of Tefillin. Tefillin must be put on every day except Shabbat and Yom Tov. A person that doesn't learn Halachot of Tefillin may be putting on Tefillin their entire life and not be getting the Mitzvah for it! A gentile in the process of conversion shouldn't put on Tefillin until the last stage of their conversion, This is why it's important to have a Rabbi guide you through the process. All the mitzvot a potential convert does are considered as practice and they don't receive a reward for them. Intentionally delaying conversion can potentially lead to becoming a wicked, but thinking they're more righteous than natural born Jews The covenant of the rainbow, HaShem's covenant with Noah after the flood.
