breadcrumbs are a very interesting
discussion panko is a certain style of
breadcrumbs the word panko can refer to

it's regular breadcrumbs they have to be

to make a granola is basically you have
about 33% dry ingredients, 66
or 6 whatever of liquid ingredients.
They take the liquid ingredients, they
cook them up and then they mix them into
the dry ingredients. You form a paste
that really it's an ear of a clearish.
really makes the food edible at that
point and then they flatten and they
just bake it to crisp it. So when the
food is really getting
through
so you're getting you're avoiding the
issue of of past because it becomes
it's not really will be served at the
king's table. So that's why it should be
mut if it's baked throughout the whole

another discussion if it has oat flour
in it not just oats if it has whole oats
that are discernible so that you're
getting bite is it considered to be
flour or not. So if the oats are fused

But again, if you have other choices
that could be vegan or certified one,
that's something that I would encourage
someone to do to see first if possible.

choice but Again, it's not hoster. It's
just uh you know, it's not for that
reason. So, if you can find one that
doesn't have that complication of a
restaurant, years ago, Starbucks was not
a restaurant. Became a restaurant much
later. So, now it's more complex.

a ma an expert baker. Even something

be baked 90%. and still be classified as

wider in complexion. The dough will be a
little chewable. It's still edible. It's
not, but it's still you still can make
that past. Some of the are if it's very
white in complexion and the dough is
still chewy. That's a sim. It's not
fully baked. Generally speaking, I'm
giving you a general guideline. It's not
an exact science,

minutes or more to finish off the baking
is not not fully baked yet. And a
baguette like 8 minutes or a full bread
would be a little more. But something
that's uh just needs a couple minutes if
it's a bread, you know, would not be
enough to make a past. A flat product
could even be less cuz it's going to
bake much faster.

Frozen French fries are the way that the
national shrimp certify them is they're
they're relying on the fact that the
yeit's going to make it so by turning on
the fire at home. Some of these French
fries are cooked quite a bit to be
cooked 70 80%. The shoestring fries are
even cooked more from what I understand,
but they're still need a little bit more
cooking and that's the reason why they
um they they they given extra make at
home. I'll tell you an interesting story
before.

they'll stay warm for over two days.
Even if you shut it off. So if you have
a mashkit, let's say visiting every two
days and he's turning on the fire, you
don't have to put in an element because
it's going to stay warm anyways. Some
tunnel ovens can last even longer.
Tunnel ovens could be as long as this
whole room. Um and they're they're
heavily insulated. The head space
between the belt and the top is only
like let's say 6 in. So, if you think
about an insulated room that's, you
know, heavily insulated and it's it's,
let's say, 500°, when you turn it off
and you close the doors, it's going to
stay hot for for days. I don't know how
many days, but many days. Um, tunnel
ovens can be very large. I have a
factory that has a tunnel oven that's
like 90 ft long.
