he gets and
where does he go to answer all these

for this conversation as well when we
began
we launched a suffering for pay staff
campaign almost two thousand people

and now our conversation with rabbi

okay thank you very much for joining us
on thank you so much for having me on
your program
um we hope that with the seattle ishmael
we can address the many many uh
hundreds and thousands of requests
uh cautious inquiries that we receive
from consumers
uh during the pesach season and mr shen
with seattle will accomplish that so
most people here who are watching have
certainly embarked on
sakura hopefully most of them are going
to be finishing tomorrow over the next
few days
i thought it would be a great
opportunity to look
into what the ou kosher deals with
specifically related to so many of the
inanimate series that came up
over the last four months and how it
comes down practically
right before pesach so i guess before we
begin
a little bit of your background how did
you get into this business
my background um and i was a magazine
i had learned iridaea um
in uh many years ago
and then my attention was drawn to
the opportunity to join the asco for a
summer program
i figured that would be a beautiful way
to complement my limit
of eurodaia and see its practical
application
at that time ravi grossman's attack led
the asco u programs it was a beautiful
program
it was so interesting and so thorough
and we really were exposed and
able to get in to see um
many many different aspects of
how the ou deals with kosheros and um
the way eurodaia is the guarding force
behind all the ou decisions and
and factories capturing everything and
it was all packed into a three-week
course
and okay i took the course i went back
to being a muggy chair i was in my chair
for
another few years and then um
i remember she's wicked reached out to
me though he was looking for someone to
answer the hotline
and i think the rest is history i took
over the hotline
um i don't know if the helpline was
buzzing
the way it is now when i took it over
but
uh my first thing in thailand was to
make every caller feel very comfortable
so we went first from 50 calls to 100
calls to 200 now it's canadian or 250
calls a day
questions from all over the globe i i
can say there's not a day that goes by
they don't talk to them
last week i spoke to a person a from yid
who's living in kurjken or
some place in in alaska you speak to
people
in all these uh different places of the
on the globe
and sometimes you meet up with a person
from the alpha game or person who's in
this
late 90s who remembered ramay shapiro
who remembered learning in
in in yeshivas in europe so it's a very
very nice experience
and um we definitely you know we tap
into the
uh know how and the place came at the ou
to be able to bring answers to all the
consumers
so you just made the data connection
people all over the world
including talking to ayud who have a
little environment shapiro
but what are some of the most common
questions let's say for this year pesach
57 81 anything specific people are
asking that they need to know about
the the most i think number one question
uh about pesach
i think remains the number one question
that's been the number one question for
as long as i'm here is the frozen
salmon at casco whether it's first time
callers or people have been using it
people just don't want to go ahead and
use something without the oup
if they don't get explicit directives
from the ou that it's okay to use for
peso they need that reassurance i'll
even ask you the question three times
i say you already have three pieces of
fish um
so the frozen fish at costco the o.u
clears and says that that fish has no
comments concern whatsoever
and it's acceptable for pesos and that
seems to be the number one question the
follow-up questions are the nuts the raw
nuts that the o.u allows
uh from costco or from any other place
raw nuts with no additives no
preservatives
are also fine and acceptable for pesach
so now that you've addressed the most
common questions i'm sure you you get
strange questions as well
you know straight the range of questions
let me just go through the range for a
moment
you know we deal with all types of

consumers you have people who are asking
questions about basic
uh ingredients if people live in areas
where it's hard to get
the hamish brands and the even the oup
brands um they're desperate to get
their hands on anything that's
acceptable for pesach and you know we
accommodate them
a lot of times we have to research there
may be people
who for medicinal reasons need certain
products now i'm going to jump ahead to
one of the strangest questions
i received was this year it was
this ps friday
a fellow calls up and he asks me
if jolly ranchers are cautiously
basically you have to
get the picture there are about 10
people on hold and he has to know about
jolly ranchers i'm saying to myself
you really need jolly ranchers for
pesach i mean give me a break i didn't
say that to him
so i said no very politely it's not
certified basically i hung up the phone
within two or three seconds
i don't know how he got back on the
phone three minutes later
again a jolly rancher's caution for
pesach
and i said no they're not they're not do
you see no ep on the container
no not kosher based i hung up very
quickly because i have the
callers that need my attention
a third time and the person he doesn't
ask the question now the way he is
the first two times he says can i just
talk to you for a moment i said sure
he says let me explain to you something
i suffer from a very very strange
illness i'm kind of a medical mystery
my body doesn't produce sugar doesn't
regulate sugar
i have the opposite problem of diabetics
i'm always low on sugar
but my nutritionists who have been
working for me with 22 years he's
afflicted by this
uh finally realized that whatever the
makeup of this candy the jolly rancher
um somehow his body absorbs it and it's
able to distribute it and it's able to
give him the sugar that he needs
so i need to know is jolly rancher's
hummus dick or just not kosher pepper
so i said you're asking a good question
and now i appreciate your question i'm
so sorry you know for being abrupt
before
i quickly reached out to the rc's there
have been coordinators in charge of that
product and
at the same time i reached out to rc's
who would have parallel products so just
in case
jolly rancher is not good i can
kind of try to guess and see what other
products would be my tin
would be good for this particular person
that contains the same sugar levels and
similar makeup etc etc
um this takes time um
but we reached out and jolly manchester
that had flower in it so it was comments
it was not
acceptable but we found jelly bellies
that again
for a coilover we were able to work out
the halachic issues
where would we accept the bittle not
metal etc
and we were able to be mata uh jelly
bellies for him
for pesach to meet his medical needs
now that's just one story of many um
of somebody who we just like you know
tried
went beyond our responsibility
shall we say of just telling you which
pace that products or which products are
facing acceptable and actually research
the product you know another story comes
to mind this is i think
the second year i was at the ou and
again answering
lots of questions emails non-stop the
phone is buzzing
the line is blazing and a guy calls up
and he wants to know for certain energy
balls caution and peso
i said you got to be kidding does it
have an oup on it no
goodbye there's nothing to talk about
the guy calls back again
and again and every time i tell the same
thing it's not certified
what's wrong with it i said look we
don't have time it's beyond the scope of
the
hotline to explain exactly what the
nuance is and what the masjid
found wrong and why this product does
not accept but it's clearly not
acceptable
i want to know is the comments not
comments i said
we have hundreds of products that we do
except for face up you you
seriously need to explain to me why you
need this energy bar for pesa
and the answer i received i mean i was
just an awe
and here's what the fellow told me he
was the chief chaplain
for the israeli air force for the idf
chief chaplain for the for the for the
uh the idf
and um he said our pilots
you know they have a sort of video of a
pilot dropping off bombs on a mission to
enemy territory
and the about face they have to make as
soon as they deliver the goods
and the maneuvers they have to do you
talk about 19 20 year olds
do you know how much energy it takes for
a human being to drop a bomb realizing
that he may be eliminating
life uh hundreds of street blocks
or whatever the mission entails and has
to get home safely
he says that mission is so draining
that immediately after delivering a bomb
or whatever they do
on enemy territory they have to
immediately replenish themselves with
some type of
recharge of energy a protein bar that
will deliver the protein to them that
they get their energy back so they can
make the flight home
so he says our new we have nutritionists
work in the army
to find the proper products that will
help these people
at the moment that they most need it and
and what
will give them the right replenishment
and these bars work like a charm so i
have to know he said
if the comments we'll have to find
alternatives but if it's kidneys we will
be mastered this even for the ashkenazi
pilots
because it's because so needless to say
we did the research we found out that
the
main ingredient was like peanuts and uh
you know some other kidney-stick
ingredients and we were able and we
allowed it and we got a very nice thank
you note from them
that of course was signed with you know
lieutenant is lieutenant dan and
whatever and they're very appreciative
of the obvious work
and we help them and we're very proud
that we were able to help all types of
people
um you know this year i've been getting
receiving phone calls
some some of these phone calls are very
very sad because a spouse will call
that a husband who's in a hospital
where she can't visit but they know he's
on some type of feed
and they ask the non-jewish nurse to
take a picture of the bottle
and send them a picture to see if it's
cautious
so you know get these medicinal
questions um
a lot of supplement questions and um
you know we tell people you know there's
no place for homelessness
if you need it you have to take it um
a lot of them are just kidneys and and
we're able to just
clear it and say that they use it
because they're vital right so it seems
like it's much more than just providing
information
from the stories you're relating it's
taking taking it to the next level
and really providing that service to
quality for all
helping people sick helping people that
are flying in the air force
and need all kinds of help and services
to be able to make it through pesach
you know the these even i want to say
another thing
israel we get questions
forget about questions we're getting
from people
hamish people lakewood brooklyn who want
to use a bottle fantastic but won't use
it for pace after there's no oyu
we receive questions from people in the
midwest
far far removed from the other sky
but they won't use the product unless
they know it's acceptable for pesach
i get so many phone calls people
i don't even know where you know
oklahoma and alabama
all over the country i want to know i'm
looking for the rogue peach
soap with the ou that my grandmother
used to use because for passover i was
taught we only use
you know i want to share another another
ou story once we're on the topic
this is i think a beautiful story
um a fellow calls up he's in florida
he's retired
lives in florida and you know just like
a little intro i'm very familiar with
the ou it's policies
i said really how come he says well i
was the floor manager at gold's gold
swordsman's famous company
was owned by the gold company by the
gold family
for many years now the goals were not
religious
he says i was the plant manager now it
would come pace up time
and this is the person voluntarily he's
telling me this story he says pace of
time though he would come in the mushrik
would say okay
we need you in order to prepare your
factory for pesach
a b and c let's say a is eliminate
certain ingredients b
is wash the machinery and we need to
pour boiling water over it and whatever
seeds
and this is golden shalom would say to
the floor manager i want you to do
much more than what he asked you i want
you to do
this and he says what do you mean the oh
you didn't even request that of you
why are you going so overboard he says
that he would say to her
i mean mrs gold you're not even that
religious
and she would say back do you know what
passover looked like by my grandparents
do you know what face that was like by
my grandparents
if you would have seen paces by my
grandparents you won't be asking me such
questions
now let me tell you the rest of the
story i happen to be a distant cousin of
the golds
but her grandparents were my
grandparents
so i told the president of the phone do

and just as a rule of thumb
everyone should know this that any kedam
wine product grape juice always starts
of 51 percent
wine or grape juice so there's no shiloh
about its you know uh uh very
preoccupied
um the rest is either concentrate
depending on how much
the sugar levels need to be brought up
or loosened
um you can be more than 51 so that's
you know there are some people want to
know reversal not reversal
um all these questions you know evolve
around the dolcosis
so that's that's something that you know
you definitely get a lot of clothes on
i'll just add in regarding to shiloh
that if you go to old off

bakery okay we just came in from seeing
where the flour gets brought into the
plant
the flour goes into these silos every
cent do you want to tell us
how long the flour sits in the silos for
we're very fortunate because we get very
frequent deliveries and our flour moves
very quickly
so even though we sift all of our flour
our flour gets
milled and sifted in pennsylvania and
gets shipped to us
and is used within a day or two
pesachmats is just two ingredients
flour and water but it's not simple
flour and it's not even simple water
so here are our two mayamshilano tanks
we actually have a third backup in
another room
these tanks will last us approximately
24 hours
so as you can see here this is the feed
line for the city water that comes into
the plant
the water goes through over here and
then you have two lines one feeds tank
number one
and one's feeding tank number two it
starts as flour in a bowl here
from there it's a clean bowl of course
from there it goes into one of our
mixers
our mixer mixes for about three minutes
this mixer is being cleaned
as this mixer is working we use a mixer
for
what happens first as soon as the master
comes down they go through here they're
cut with a knife
and then it's going to go through a
series of rollers
where the matzah gets thinner and
thinner and thinner this
is the finishing roller where the matzo
is now at exactly the right size
so it passes through this roller which
cuts it
into six different sections and with the
speed of the belt one belt is running a
little faster than the other
it's gonna pull the monster separate the
matzah
passes through this oven makes its way
down into the other side when it exits
the oven
it's completely baked last part of our
process is a final inspection
we're looking for anything that could
have been missed on the way into the
oven
or that could have happened in the oven
has a bell which will alert the other
side if everything has to go into the
garbage
once the matzo makes its way down here
it gets sorted by
the picker this is not a cautious issue
this is called the schubert machine
so the matzo that's not picked up
because it's not exactly the right size
will make its way onto the final line
where it'll go into matzo meal
